I have some leftover pot roast in my freezer that I have to use. Any ideas? My kids don't like bbq beef sandwiches (don't like bbq sauce), otherwise I'd make those.Recipes including cooked, shredded beef?

You can make flautas (a.k.a. taquitos, depending on where you live)
you need:
corn tortillas
the shredded beef
lettuce
tomatoes
sour cream
salsa
avocado
cheese
etc.
1. Cook the corn tortillas very briefly in oil to soften them up
2. Roll the beef and cheese in the tortillas and line them up in a pan
3. Sprinkle them on top with cheese
4. Bake for about 15 minutes at 400 (check them, you may have to adjust the time)
5. Serve with the above toppings, or whatever you like.
We usually line them up on the plate, and then put all the toppings right on top, but you can dip them too!
This is one of my favorite things to eat, great with shredded chicken, too.
mmmmmm, burritos. That sounds so good. I loved burritos as a kid cause i could make it the way I like. heat up some refried beans, the beaf, put out some small bowls with salsa, guacamole, grated cheese, sour cream, sliced olives, chopped tomatoes and onions, and what ever else you think would go good on it. Let them put whatever they want on theres. It's a good family night meal.

Make Italian Beef sandwiches. Shred the beef and pour in a bottle of Zesty Italian salad dressing. Let it simmer for about half an hour and serve.
We have done this before when pressed for time and wanting Italian beef sandwiches.
Sprinkle with seasoning salt and heat thoroughly. Shred beef with fork tongs. Top beef with a small amount of salsa or taco seasoning mix. Serve shredded meat in tacos, burritos, taquitos, flautas, on rolls or over cooked rice.

You can make beef stroganoff. Saute some onion %26amp; mushrooms, add the beef and a little gravy %26amp; shred the beef %26amp; about 8 ounces of sour cream %26amp; serve on hot buttered noodles. Serve with your favorite veggie or a salad. YUMMY!
