I just became diagnosed with Celiac Sprue also. There are lots of recipes to try. You can look into these websites:

These sites have info on the disease and what she can eat and should avoid and links to other sites for recipes and shopping lists. If she likes potatos, my lastest try was to cut 4 potatoes into slices or wedges, keep the skins on. In a ziplock bad put 1/2 cup virgin olive oil and add any seasonings you'd like. I put in salt, pepper, garlic salt, italian seasoning. Put a hand ful of potato slices in and zip shut. Shakes it around until all pieces are coated. place flat on a cookie sheet. Spray the sheet with olive oil spray, I didn't and some get stuck. Finish doing this to the rest of the slices. Bake in oven at 375 for 30 minutes. Taste good plain or can dip in ketchup. She can have corn, potatoes, rice, soybeans, tapioca, arrowroot, carob, buckwheat, millet, amaranth, and quinoa.





Be creative...





Corn... use corn tortillas layered with taco meat and cheese to make a Mexican lasagna. Make enchiladas using corn tortillas.





Potatoes... make or buy gnocchi (potato pasta dumplings) or make baked potatoes with a meat and veggies. Use mashed potatoes on top of ground meat and veggies to make a Shepard's Pie. Buy frozen perogies and prepare according to package directions, then top with ground meat and mixed veggies. Potatoes are very versatile.





Rice - you can do Spanish rice with meat and cheese, served with a salad... you can do a Chinese style stir fry with meat/chicken strips and lots of veggies and serve over rice... you can use rice noodles as well... available in the Asian food section of grocery store... top with stir fry meat and veggies or try with Italian pasta sauce and zucchini and mushrooms like a pasta primavara. Make Beef stroganoff and serve it over rice instead of noodles. Give risotto a try!





How about chili? Serve with white corn tortilla chips and top with a little lowfat sour cream, guacamole and salsa.





Lots of soups and chowders would contain corn, potatoes, and/or rice but none of the forbidden foods... so try your hand at seafood chowder or gumbo! Both are thick and filling :)





For desserts, use tapioca pudding, fresh fruits, custards, flan, rice pudding, or just dessert coffees.... or you can use pie fillings that have been thickened with tapioca and just warm them and serve them over ice cream.
