Hi Robert,

Yes I do know what you mean about a fixed income..How I would cook those 2 chicken breasts,First salt, pepper and put Granulated Garlic on both sides of the breast.. Then melt some butter and coat the bottom of the pan with it..A pan to put the chicken breast in the oven.Bake at 425 degrees cook 10 minutes on one side and the turn the breast over and cook another 10 minutes..The breast should be done by then..They with be nice and juicy and taste pretty good.. Enjoy My Friend..

I don't know what else you may have to work with, but if you have lemon, lime or an orange, you can squeeze the juice from one of them and then add some minced garlic, salt, oregano and rosemary for a marinade. Grill or broil.

If you have soy sauce: add in minced garlic, a bit of brown sugar, squeeze of lemon juice, ground ginger and dried red pepper flakes. This makes a decent teriyaki sauce.

If you don't have an ingredient, just don't use it and make the recipe up as you go along.

You could always cook your chorizo with eggs and potatoes to have a breakfast for dinner.

Italian dressing makes a decent marinade for chicken.

You can brown the breasts, put in small casserole dish and top with cream of mushroom or cream of chicken soup, add in some rice and bake.
I don't have a recipe, but I'll tell you how to convert any recipe to any size.

1) Divide the New Yield (the number of portions you want) of the recipe by the Old Yield. New Yield/Old Yield = Conversion Factor (C.F.)

2) Multiply every ingredient in the recipe by the (C.F.). That's it! Pretty simple.

Just be careful if your yield is listed in measurement units.

For example, if your new yield is in ounces and your old yield was in pounds, you'll need to convert one of the yields so that the units are the same.
