I am looking for a good recipe to cook fish.?

The fish is the frozen kind you buy that comes in a ';brick'; form.


I heard you can cook it from a frozen state in the oven somehow.I am looking for a good recipe to cook fish.?
Best to thaw it out first...but then, take a package (dry) of italian dressing mix, add one tablespoon lemon juice and one tablespoon water, mix together all 3 and coat the fish both sides, then bake in a 350 degree (F) oven until done. The mix and lemon juice gives it a wonderful flavor, its easy to prepare, and serve with some roasted new red potatoes, a salad and a bottle of crisp white wine. VERY elegant meal, with little fuss!I am looking for a good recipe to cook fish.?
Herb baked fish fillets with butter and tarragon and thyme.





INGREDIENTS:





1 pound frozen fish fillets, partially thawed


1/4 cup chopped onion


1 clove garlic, minced


2 tablespoons butter


1/2 teaspoon dried tarragon, crushed


1/4 teaspoon dried thyme, crushed


dash pepper


1/4 cup corn flakes, crumbled





PREPARATION:





Place fillets in greased baking dish. Cook onion and garlic in butter until tender. Stir in seasonings, cook 1 minute longer. Spread mixture over the fish fillets. Top with cornflake crumbs. Bake at 450掳 for 12 to 15 minutes, until fish flakes easily with a fork.

Butter Sauce:


1/2 lb. unsalted Butter


2 Tbsp. Lemon Juice


1 Tbsp. Chicken Bouillon


1/4 tsp. White Pepper


3 Tbsp. Onion, chopped fine


1 Tbsp. Garlic, chopped fine


1 tsp. Oregano


3 Tbsp. White Wine


Salt to taste





Spices for fish:


1 tsp. Paprika


1/4 tsp. White Pepper


1 tsp. Salt


1/4 tsp. Black Pepper


1/2 tsp. Oregano


1/2 tsp. Thyme


1 1/2 tsp. Cayenne Pepper


1/4 tsp. Garlic Powder





4 (8 - 10 oz) Snapper filets (but most any fish will do)


1 lb. Crawfish Tail Meat


1/2 lb. Lump Crab Meat


1/2 C. melted unsalted Butter





To make the butter sauce, allow unsalted butter to soften to room temperature. Combine all other ingredients with butter and blend till smooth. Refrigerate until needed. To make the spice mix, combine all spice ingredients and mix well. Place in a spice shaker. Preheat oven. Melt 1/2 cup of unsalted butter and brush the belly side of each fillet evenly. Sprinkle spices on fish. Place fish on grill belly side down and repeat this step for the opposite side of fish. Frill each side approximately 3 to 4 minutes. While fish is cooking, melt half of the refrigerated butter sauce from the first step in a saut茅 pan. Add crawfish and crabmeat to saut茅 pan and stir occasionally until hot. Set aside. When the fish is ready, reheat the butter sauce and add additional butter sauce from the first step to make the sauce creamy. Serve sauce immediately over the fillets.

but if i were you I would thaw it out so you can season it. YOu can't season anything frozen.
You can bake it in the oven with some butter and lemon. If it is a firm fish, you can grill it with some creole seasonings. Or you can batter and deep fry it.
You need a shallow metal pan with about 1 inch sides. Heat the oven to 400 and if the fish has nothing on it but the ice from the freezer, add some lemon or butter. You'll need to cook it for about 18-25 minutes, then check to make sure it is done in the center of the filet. Season to taste.
