if the goat is whole, chop it up
mi Jamaican mum would take some green onions, yellow onions, scotch bonnets, fresh thyme, allspice berries, garlic, curry powder, soy sauce (she was of Chinese descent) and whtie vinegar and blend it up
then she would wash the meat with vinegar and salt
rinse
marinate with blended mixture overnight
then slow cook at least 4 hours
add cut up potatoes and chopped onions after 3 hours
add cut up tomatoes when meat is tender and cook another 15 minutes
serve over white rice
can use a less spicy chili or none if desired
