I was wondering how I should cook chicken, besides fried chicken.

Here are a few really easy recipes:





Cola Chicken





4-6 boneless, skinless chicken breast halves


1 cup ketchup


1 cup cola


2 Tbsp Worcestershire sauce





Place chicken in 9x13 casserole. Sprinkle with salt and pepper. Mix ketchup, cola, and Worcestershire, pour over chicken. Cover, bake at 350 for 50 minutes.





Easy Creamy Chicken





6-8 boneless, skinless chicken breasts


1 can cream of chicken soup


1-3oz package cream cheese


1-8oz carton sour cream


3-4 green onions, chopped





Place chicken in 9x13 dish. Sprinkle with salt, pepper, and good seasoned salt. In saucepan, combine soup, cream cheese and sour cream on low heat just until cheese melts and ingredients mix well. Pour mixture over chicken, sprinkle green onions on top. Cover, bake at 300 for 1 hour. Uncover and bake another 15 minutes. Serve over noodles or rice.





Nacho Chicken





6-8 chicken breasts (or 8-10 chicken thighs)


2 cans nacho cheese soup


戮 cup milk


3 tbsp worchestershire sauce





Place chicken in large baking pan. Sprinkle with salt, pepper, and a spicy seasoned salt. Combine soup, milk, and worchestershire sauce in saucepan until just heated through. Cover and bake at 350 for 1 hour.





Lemonade Chicken





6 boneless, skinless chicken breasts


1 (6oz) can frozen lemonade, thawed


1/3 cup soy sauce


1 tsp. garlic powder





Place chicken in greased 13x9 casserole dish. Combine next 3 ingredients and pour over chicken. Cover with foil. Bake at 350 for 45 minutes. Uncover, pour juices over chicken and cook another 10 minutes uncovered. Serve over hot, cooked rice.





Easy Chicken and Biscuits





2 boneless, skinless chicken breasts, cut into bite-size pieces


2 T. oil


16 oz. frozen veggies, thawed


1 can cream of celery soup


戮 cup water


陆 t. chicken bouillon granules


1 T. Worcestershire sauce


录 t. seasoned salt


Salt and pepper to taste


8 oz. tube refrigerator biscuits





Cook chicken in oil until no longer pink and juices run clear. Drain. Combine all ingredients, except biscuits, in a medium saucepan. Heat until bubbly. Spread into 9x5 loaf pan. Place biscuits on top, bake at 325 for 20-25 minutes or until biscuits are golden.





Easy Chicken Pot Pie





4 chicken breasts, cooked, skinned and deboned


40 oz bag frozen mixed vegetables


4 small potatoes


2 cans cream of chicken soup


4 Pillsbury ready pie crusts (in the dairy case)








Directions


Cook vegetables with potatoes until done. Drain and add soup and cut up chicken. Season to taste. Put into two unbaked pie shells. Top with pie crusts (cut vents). Bake at 350 degrees for


1/2 hour or until brown. Cool a bit before cutting.

Parmesan Chicken





鈥?4 to 6 boneless, skinless chicken breasts


鈥?1 cup all-purpose flour


鈥?1 teaspoon kosher salt


鈥?1/2 teaspoon freshly ground black pepper


鈥?2 extra-large eggs


鈥?1 tablespoon water


鈥?1 1/4 cups seasoned dry bread crumbs


鈥?1/2 cup freshly grated Parmesan, plus extra for serving


鈥?Unsalted butter


鈥?Good olive oil

Directions


Pound the chicken breasts until they are 1/4-inch thick. You can use either a meat mallet or a rolling pin.


Combine the flour, salt, and pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs and 1/2 cup grated Parmesan. Coat the chicken breasts on both sides with the flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly.


Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts. Serve with extra grated Parmesan.
Easy Chicken Tikka Masala Recipe





Ingredients


Chicken thighs (2#), frozen mixed vegetables (1large bag), butter or margarine (1tbsp), vegetable oil (2tbsp), honey (1tsp), plain yogurt (8oz), Archer Farms brand chicken Tikka Masala Sauce (1bottle).





Method of preparation:-


easy-chicken-tikka-masalaTake a pan, place it over heat. Heat 2 tablespoon of vegetable oil in it. Then add honey, butter and sauce in it. Cook it over medium heat by stirring it properly until the mixture gets smooth. Then add thawed frozen vegetables in the pan. Cook them by stirring slowly. Turn down the heat to low and keep this mixture to simmer until it gets heated. Take yogurt and add it slowly to the pan and then mix it slowly with large spoon until the mixture gets blended. Sprinkle the fresh snipped cilantro on the top and serve it with naan.
Chicken Ritz Casserole








5-6 chicken breasts, cooked


1 can cream of chicken soup


1 can cheddar broccoli soup


about 1/4 soup can of milk


1-1/2 c. sour cream


2 c. cooked minute rice (1 c. prior to cooking)


dash salt and pepper


30 to 40 Ritz crackers, crumbled


Butter


Cooking Instructions:


Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.











Chinese Walnut Chicken


Chicken breasts strips are stir-fried with scallions, ginger and garlic, and seasoned with bourbon and soy sauce.Ingredients:


鈥?1 teaspoon cornstarch


鈥?1 Tablespoon water


鈥?1 egg, beaten


鈥?4 , boneless chicken breasts, cut into one-inch cubes


鈥?3 Tablespoons soy sauce


鈥?1 Tablespoon bourbon


鈥?1/2 teaspoon sugar


鈥?4 Tablespoons oil


鈥?3 whole scallions, cut into 2-inch slivers


鈥?2 slices fresh ginger, minced


鈥?1 medium garlic clove, minced


鈥?3/4 cup coarsely chopped walnuts


鈥?Hot cooked rice


Method:


In a bowl, mix together cornstarch, water and egg white. Add chicken and toss until thoroughly mixed. In a small bowl, combine soy sauce, bourbon and sugar. Set aside. Heat a wok or large heavy skillet over high heat until a drop of water ';skittles'; across and evaporates immediately. Add 2 Tablespoons of oil, swirl, and add chicken. Quickly stir-fry 3 to 5 minutes or until no pink shows. Quickly remove from pan and set aside. Reduce heat to medium-high and add the remaining oil to pan. Add scallions, ginger and garlic; stir-fry for 1 minute. Return chicken to pan. Add soy sauce/bourbon mixture and cook, stirring, about 1 minute. Stir in walnuts, mix well and serve with hot cooked rice.


Notes:


One tablespoon of bourbon is the secret ingredient in this recipe. But since nobody in our family drinks, I buy the smallest bottle of bourbon possible and keep it in my seasoning and flavoring cabinet among the vanilla extract, maple syrup and spice blends. It won't spoil and keeps forever.











Garlic Chicken Breasts with Brown Sugar


This is so easy and very good!


Tbs oil


6 or more garlic cloves, minced


1 Tbs brown sugar


3 boneless chicken breasts





Preheat the oven to 500F.





Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.





Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.





Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.

Chicken Scampi





Prep/Cook Time: 20 min.





2 tbsp. butter


1 1/2 lb. skinless, boneless chicken breast halves (4 to 6)


1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Chicken Soup (regular or 98% Fat Free)


1/4 cup water


2 tsp. lemon juice


2 cloves garlic, minced or 1/2 tsp. garlic powder


Hot cooked pasta





Directions:


1. Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it鈥檚 well browned on both sides. Remove the chicken and set aside.


2. Stir in the soup, water, lemon juice and garlic. Heat to a boil. Return the chicken to the skillet and reduce the heat to low. Cover and cook for 5 minutes or until chicken is cooked through.


3. Serve the chicken with the pasta. Serves 4.

Asian Chicken %26amp; Rice Bake





Prep Time: 5 min. - Bake Time: 45 min.





3/4 cup uncooked regular long-grain white rice


4 skinless, boneless chicken breast halves


1 can (10 3/4 oz.) Campbell's(R) Condensed Golden Mushroom Soup


3/4 cup water


2 tbsp. soy sauce


2 tbsp. cider vinegar


2 tbsp. honey


1 tsp. garlic powder


Paprika





Directions:


SPREAD rice in 2-qt. shallow baking dish. Top with chicken.


MIX soup, water, soy, vinegar, honey and garlic powder. Pour over chicken. Sprinkle with paprika. Cover .


BAKE at 375掳F. 45 min. or until done. Serves 4.

Chicken Diablo





2 cups cooked cubed chicken


4 cups cooked pasta





Put chicken and pasta in shallow baking dish and cover with this sauce:





1/2 can cream of mushroom soup


1/2 cup mayo





2 tsp curry powder





sprinkle with shredded cheese and slivered almonds


bake till heated through 325 degrees about 15-20 minutes

Chicken curry





SAUTE: 2-3 chopped onions till soft


ADD: 3 Tbsp curry powder and a little water cook for a minute or two


ADD: 1 tsp whole cloves


2 broken cinnamon sticks


2 Tbsp paprika


2 Tbsp cumin


2-3 whole chilies (your preference for heat level)


COOK these for a few minutes


ADD: 1 large can chopped or crushed tomatoes


4 lbs chicken pieces of your choice


2 cups coconut milk





Simm
I like to brown my chicken breasts in some EVOO and garlic, then smother with salsa, preferably the kind with pineapple, mango, peach or other fruit in it. Heat just until hot and serve over white or brown rice.





I also like to add (if I have it):


Extra fruit


Chunks of green pepper, or any color for that matter
This is what I make for my family, it's healthy and quite easy.





You'll need as many chicken breasts, skinless and boneless as needed. (One per person.)





Preheat oven to 400 degrees.





Get a cookie shet out and cover with tinfoil.





Put chicken breast on tinfoil and drizzle with olive oil, garlic powder, salt and a tad bit of pepper. Create a packet with this one, then do this with the rest of them. Making a packet for each.





Pop in oven for 60 minutes.





I'd say when it has about 5 minutes cooking left, unwrap them so they can get nice and brown ontop.

one of our family favorites-- boneless skinless chicken breast placed in 9x13 pan pour 1 can cream of chicken soup mixed with milk on top. then top with 2 boxes prepared stove top stuffing bake @ 375 until chicken is done. serve with a vegetable and biscuits.
Boil the chicken up, when it is done and cooled to where you can touch it, pull the meat into shreds and make chicken quesadillas.

put some chicken in a backing dish, pierce with fork, pour italian dressing over chick (choose one with lots of herbs). Bake at 375 for 1 1/2 hrs., serve with mashed potatoes and vegetables.
