My boyfriend doesn't like vegetables and I love to cook. Any recipe suggestions?

CHICKEN ALFREDO





2 lbs boneless chicken breasts


4 tablespoons oil


1/4 cup butter


1/2 cup Parmesan cheese, grated


3/4 cup heavy cream


salt and pepper, to taste


1 lb fettucine





Heat oil in a 10 inch skillet. Cut chicken breast into strips. Add salt and pepper. Fry on medium heat until cooked through.





Sauce:





Melt butter in saucepan; add cream and cheese. cook over low heat, stirring constantly. Do not boil.


Cook fettucine in 3 quarts boiling water. Mix chicken and Alfredo sauce together. Drain noodles. Put sauce and chicken over nood

Hahahaha. My husband also initially refused to eat any type of beans or legumes so you have to 'sneak' them in. Try a really good homemade pasta sauce. In your tomato base, sneak in very finely chopped red peppers and onions. The colours will blend in, and he will be getting veggies :) Or, start him out with yummy potato recipes like garlic mashed. Try broccolli smothered in cheese sauce (even the pickiest can't refuse). I also go the extra mile and try to imitate his favourite restaurant foods. Chicken fajitas or quesadilla's. Don't worry! A Shepherd Pie, stews and casserole are all good ways of adding vegetable to meals.


There are many non vegetable dishes like mince and pasta that don't have vegetables.





I would suggest you sit down and talk to him about vegetables he may want to try. Start with carrots, they are a good 'cooks treat'.


When my sisters wouldn't eat carrots my mum would peel the carrots and give my sister a piece or two as she cut them to taste test each one. It worked.


Get him to shell some green peas, and to taste test a few.

He is or will not be open to aid you in other things either..
You can sneak a lot of veggies into meatloaf, lasagna, stews and quiches. The other flavors and textures will hide them.
