I agree clean them and pan fry


BUT do not remove the head


use it to hold it while you remove the meat and skin and carefuly remove the tender flaky meat


Lift the fish and on the bottom side (skin on the plate) use a fork to seprate the meat turn it over and repeat


the meat well seperate from the skin also


and remove the spinal bone and rib cage


Plus there IS the most delicious piece of meat in the cheek

Fillet them. You don't need to pick the bones. These fish are small and so are the bones.





Dip in egg, dust with fine cornmeal seasoned with salt, pepper and onion powder.





Fry in oil or bacon grease.





Serve with hot sauce, tarter and french fries.
Gut them and pan fry them whole. Cut from the anus up to the head remove the guts and cut the head off just behind the gills. Then pan fry them in butter or oil with your favorite seasonings. I like butter and emerils southwest seasoning
Clean the fish, no need to try to fillet them. Mix equil amounts of cornmeal and flour. Salt and pepper them and roll them in the cornmeal mix and fry in hot oil.
