Taco Pie!


Quick and easy!





Line a pie pan with unrolled and stretched crescent rolls, covering the whole pan. Crumble Doritos (nacho cheese I find the best.) onto the crescents. Brown 1 lb. ground beef. Drain. Add 1 taco seasoning and prepare as directed. Pour meat into pie pan. Spread 1 container sour cream (the usual size.) on meat, top with shredded cheddar, making sure you cover the sour cream. Top cheese with crushed doritos. Cook according to crescent directions. Tada. A nice tasty meal that the whole family likes. This feeds my family of 4 fine. also like to top it with lettuce and tomatoes, and sometimes I add black olives to the sour cream level.

I made the BEST pork chops the other day!!!





Take a pack of 6 boneless pork chops and dip them in beaten egg and bread... but don't just bread with breadcrumbs... mix a packet of Lipton Onion Soup Mix with the breadcrumb... mix really well in a bowl...


Bread them like normal and place in a pan...


Then cut up potatoes and coat with olive oil, garlic, salt, pepper and parsley and place in pan also. Cook for 45 minutes to an hour... or until pork is done...


Make sure you grease the pain with cooking oil, or cooking spray before you put chops in pan... Flip them halfway through ... if they stick, then don't flip them... but if you grease it... they won't stick..


make any veggie you like....

Tex-Mex Mac 'n Cheese





1 lb ground beef


1 tsp salt


1/8 tsp ground black pepper


1 green bell pepper, chopped


1 medium onion, chopped


1 pkg macaroni and cheese dinner, prepared as directed


1 can (16oz) tomatoes, diced, with liquid


1 can (12oz) whole kernel corn, drained


1 can (6oz) tomato paste





Brown ground beef with salt and pepper in a large skillet. Add onion and green pepper; continue cooking until onion is tender. Add corn and tomatoes and tomato paste; heat through. Stir in prepared macaroni and cheese dinner; simmer for 8-10 minutes. Serves 6.

Tropical Baked Chicken





3 lb chicken pieces


4 tsp dijon mustard


2 Tbl honey


1/2 cup onions, chopped


1/4 cup green or red bell peppers, chopped


2 Tbl butter, cut into pieces


1 tsp dried basil, crumbled


1 tsp paprika


1 tsp ground cinnamon


1 cup orange juice


1/2 cup pineapple juice


1/4 cup dark brown sugar, firmly packed





Preheat oven to 350F.





Mix together dijon mustard, basil and honey. Smear the chicken with this mixture.





Arrange chicken, skin side down, in a shallow roasing pan or baking dish.





Sprinkle the pieces with onions, peppers, butter, salt and ground pepper (to taste), half the basil and 1/2 tsp each of cinnamon and paprika.





Pour orange and pineapple juice around the chicken. Bake, basting once, for 30 minutes.





Turn the chicken skid side up, season with salt and pepper, the remaining basil, 1/2 tsp each of cinnamon and paprika, and all of brown sugar.





Bake until the chicken is tender and golden, about 20 minutes. Add more orange or pineapple juice if the pan seems dry.





Pour the juice into a small saucepan and boil over high heat until in becomes syrupy. Spoon the sauce over the chicken and serve.
You can always do what I am planning and go with the old stand by Meatloaf... you can add just about anything so the possibilities are endless....
taco salad rice beans
Easy Lasagna





1 (400 g) can tomatoes, in juice


1 (1 1/4 ounce) packet onion soup mix


1 teaspoon beef stock powder


1/2 teaspoon dried oregano


1/2 teaspoon dried basil


1 teaspoon green herb stock powder


4 tablespoons tomato paste


1 tablespoon soy sauce


1 garlic clove, crushed


450 g beef mince


1/2 cup water, hot


150 g small lasagna noodles


1 1/2 cups cheese, grated


1/2 cup dried breadcrumbs


parsley, chopped, to garnish











1. Pour tomatoes and juice into a large bowl and cut the tomatoes into pieces.


2. Add soup mix, stocks, herbs, tomato paste, soy sauce, garlic, mince and water.


3. Mix thoroughly.


4. Grease a round casserole dish (21cm) and spoon a third of the meat mixture into it. Arrange half the noodles on top and cover with another third of the mixture. Spread the remaining noodles evenly and top with the remaining meat mixture. Cover and cook on HIGH for 12 minutes.


5. Stand covered 15 minutes.


6. Uncover and cook on HIGH for 3 minutes.


7. Spread the cheese over the top and continue cooking for 1 1/2 minutes.


8. Sprinkle with dried breadcrumbs and parsley.


9. Stand uncovered for 5 - 10 minutes before serving.
