Fresh artichokes.... mmmmmm. First, with a scissors, cut off the sharp end. Then pour enough water in a deep saucepan to cover the choke. Add some chicken bouillion and fresh lemon juice. In goes the choke... bring to a rolling boil, then simmer for about 30-40 minutes... maybe longer if it is a large choke. To test for doneness, a leaf should pull out easily. For the sauce, I use melted butter, a little mayonnaise. fresh lemon, and garlic... all mixed together. Then I blend in some Parmesan cheese. Pull off the leaves, dunk in sauce, and scrape the meat with your teeth. The very best part is the heart at the very bottom of the choke. just make sure you scrape off all the fuzzy part first.
After trimming off all sharp points, I place them snugly in a pan so they stand upright. Simmer for about 30 minutes in water that you flavor with a garlic clove, lemon juice, olive oil, and salt. Serve at room temperature with mayo for dipping.
Delicious Artichokes
INGREDIENTS
4 medium artichokes
1/2 cup butter, melted
3 tablespoons basil pesto
1/4 cup Italian seasoned bread crumbs
DIRECTIONS
Trim the stems from the artichokes, and remove the small leaves from the bottoms. Slice 1 inch or so off the top so that it is flat. Pour 2 cups or 1 inch of water into a large pot, and insert a steamer basket. Place artichokes into the steamer, cover, and bring to a boil. Allow them to steam for about 15 minutes, or until a fork can easily pierce the stem.
In a cup or small bowl, mix together the melted butter and pesto. Drizzle the mixture over upright artichokes, being sure to dribble into all of the crevices. Then sprinkle bread crumbs across the tops and serve.
