Sorry for the copy-paste, but this was what I wrote to somebody else and I think it can help you, too. :P
I'll give you some ideas; my mom was a single mom and I ended up cooking cheap, good meals for us every night.
1. Pork'n'beans night. You take a can of pork and beans and add cut-up hot dogs. It actually tastes pretty good and kids love it. Serve it with macaroni and cheese, you can make it yourself or use a box mix (I used the shell kind) and serve it with some broccoli.
2. Spaghetti bowls. Boil your spaghetti and drain it; add the sauce DIRECTLY to it from the jar; you don't even have to heat it up because it steam cooks and then there's no splatter, either. Mix it up very well; put some bread in the toaster; when it comes out, put some butter and garlic on it. Serve the spaghetti in bowls with the garlic bread stuck in the side for dipping; add a salad if you want.
3. Chicken soup day. Take chicken stock, fresh chicken (boil it and set it aside; then rip into bite-sized pieces), sliced carrots and celery and spinach. Boil a few cups of rice in the broth; when it's almost done, add the other ingredients and simmer until the vegetables are tender. Very filling, and tastes great the next day.
4. Sloppy Joe day. Take a large pack of hamburger meat and cook it on low until it's done; then add to it a can of sloppy joe mix (can buy it for 1 dollar at the grocery store) and pile it onto a hamburger roll. Serve it with buttered corn on the cob for messy fun.
5. Tuna sandwiches are easy; just take tuna, mayonaise, tomatoes, pickles, and any other veggies you like and mix them together (slice the tomatoes and pickles, obviously) and serve with lettuce and cheese on toasted bread. You can add a can of soup from Campbell's or something to make this a nice meal on rainy days.Terrible cook needs easy supper recipes.?
Hamburger helper is good and easy tuna helper also. You can make a chicken casserole not only is it good but healthy too. The easy way is to get to boxes of macaroni and cheese, a can of peas and a can of corn. Get some boneless chicken breast, and saute it over a hot skillet with some canola oil or olive oil which ever you prefer cut the chicken into slices, drain the can veggies after they are cooked mix all those ingredients before addin the cheese than ad the cheese. After That get a baking pan pour the mixture in the baking pan spreading it evenly. Once thats done get some shredded cheese put on top and bake until the the cheese is melted. Let cool and enjoy. This goes well with dinner rolls and sweet tea.
Rosy Beans %26amp; Rice
1 cup tomato juice
1 cup quick-cooking rice, uncooked
2 cans (19 ounces) Campbell鈥檚 Chunky Bean %26amp; Ham soup
In large saucepan, over medium heat, heat tomato juice to boiling. Add rice. Remove from heat. Cover; let stand 5 minutes.
Add soup; heat through.

Hamburger Rice Soup
1 pound ground beef
2 (14.5 ounce) cans diced tomatoes
2 cups cubed potatoes
2 carrots, chopped
1 onion, chopped
4 teaspoons salt
1/4 cup uncooked white rice
1/8 teaspoon ground black pepper
6 cups water
DIRECTIONS
In a large saucepan over medium heat, saute the ground beef for 5 minutes, or until browned. Drain the excess fat and add the tomatoes with liquid, potatoes, carrots, onion, salt, rice, black pepper and water. Bring to a boil and reduce heat to low. Simmer for 1 hour and serve

Macaroni and Cheese Kielbasa Casserole
1 (8 ounce) package uncooked elbow macaroni
1 pound processed cheese, cubed
1 (15 ounce) can mixed vegetables, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 pound kielbasa sausage, sliced
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
In a large bowl combine macaroni, processed cheese, mixed vegetables, mushroom soup, 1/2 of a soup can of water and sausage. Transfer to a 9x13 inch baking dish.
Bake, covered with aluminum foil, for 20 to 25 minutes.
I am also a lousy cook and I also HATE to cook, but my friend made this years ago and I love it. EASY and really good I think.Not healthy though its for splurge night! 3 ingredients. Chicken breast,3-4. Mexican flavored cheese whiz, the big jar. Nacho cheese doritos. Cut the chicken into small bits and cook in skillet with a little butter til done. Put cheese whiz in sause pan 1 jar whiz %26amp; 1 jar water low heat til smooth. Put a layer of doritos on bottom of a square casserole dish crush a little-not to crumbs. Put the chicken into the cheese sauce-pour about 1/3 over 1st layer of chips-add another layer of chips repeat. (3 layers) Then crush almost to crumbs a few chips for the top and bake at 375ish for about 20 mins., really just long enough for the hot cheese/chicken to become one with the chip layers and soften them. Its usually done right when the chip crumbles get dark brown on top. I'm NOT a real cook by any stretch of the imagination, but this is so easy its one of my all time favorites. (my mother would die lol she was an awesome cook) hope you like it, like I said not healthy for splurge night.
Campbell's庐 15-Minute Chicken and Rice Dinner
1 tablespoon vegetable oil
4 skinless, boneless chicken breasts
1 (10.75 ounce) can Campbell's庐 Condensed Cream of Chicken Soup or Campbell's庐 Condensed 98% Fat Free Cream of Chicken Soup
1 1/2 cups water
1/4 teaspoon paprika
1/4 teaspoon ground black pepper
2 cups uncooked instant white rice*
2 cups fresh or frozen broccoli flowerets
Heat oil in skillet. Cook chicken 10 minutes or until browned.
Remove chicken.
Add soup, water, paprika and pepper. Heat to a boil.
Stir in rice and broccoli.
Return chicken to pan.
Sprinkle additional paprika and pepper over chicken.
Cover and cook on low heat 5 minutes or until chicken is done. .
Bake some big potatoes (oven, not microwave). When they're soft, ';fluff'; them up and put some heated canned chili on top. Then sprinkle shredded cheese, shredded lettuce and fresh chopped tomatoes on top. Serve with some sliced orange, or citrus fruit salad .....
BBQ steaks, chicken, pork chops, fish. Serve with green salad (get pre-bagged ones) and rice (Rice-a-Roni is fine) and a steamed vegetable. Keep glass bowls of fresh chopped fruit, or sliced strawberries, in the refrigerator to go with meals. Get deli coleslaw and mix with a bag of shredded cabbage ( no need to add more dressing - the store coleslaw is too runny) and keep it in a big bowl in the refrigerator to serve with meals..... Open %26amp; drain cans of green beans, wax beans, kidney beans and garbanzo beans. Slice a fresh onion and toss it all with some good Italian dressing. Keep the bean salad in a bowl in the refrigerator, to serve with meals (keeps for weeks)
ONION CHEESE QUICHE
If you use premade pie crusts, this recipe is a cinch! Use a Starfrit dicer or food processor to dice the onions. I put the second quiche in the freezer for another day.
Pastry for 1 quiche dish OR 2 pie crusts
3 large onions, diced
2 tbsp. butter or margarine
1 tbsp. flour
4 oz. Swiss cheese, grated (1 c. grated)
2 eggs
2/3 c. milk
1 tsp. salt
Dash pepper and nutmeg
Preheat oven to 375F. Saut茅 onions in melted butter or margarine over medium heat for about 10 minutes. Do not brown. Sprinkled with flour and mix well.
Beat eggs, milk, salt, pepper and nutmeg. Add onions and half of cheese. Place in pastry shell or pie crusts. Top with the rest of the cheese.
Bake at 375F for 30-35 minutes, until golden. A knife inserted into the center should come out clean.

Crab Pasta Bake
8 oz spiral pasta
陆 lb fresh mushrooms
Some garlic powder
陆 c butter
16 oz crab
陆 c sour cream
2 tsp salt
1-陆 tsp dried basil
1-陆 c shredded cheese
1 large onion
Preheat oven to 350 degrees.
Cook pasta according to package instructions. Clean mushrooms. Dice onions. Saute both in butter.
Mix all ingredients together except for shredded cheese. Spread in a 13x9 pan. Sprinkle cheese on top. Bake for 30 minutes.
1. Chop a medium size onion, or don't. Depends on your energy level. If you have the energy, saute the onion in a little oil in a large frying pan or pot. Add two cans of red kidney beans--one ';creole style'; and one any other variety, such as one with chili flavor. Add one can of no-bean chile. Add salt and pepper and a little water and cook over low heat for about one hour. Check it every 20 minutes or so to make sure it isn't getting too dried out and add a little water if necessary. Serve it over corn chips and call it ';Red Bean Goulash.';
2. This one is easier than it looks, especially if you have access to a salad bar. Buy some bell peppers in various colors--or, better yet, get a cupful or so already sliced from the salad bar. While at the salad bar, get some sliced mushrooms and sliced red onion and cherry tomatoes. Buy some corn nuts (in ';ethnic'; section of store) and walnuts (both optional.) Buy some Newman's Own oil and vinegar salad dressing (the one with around 160 mg. sodium). Optional seasonings: cumin, ground ginger, salt, pepper.
Halve the tomatoes and chop the walnuts. After slicing the vegetables (if you can't get them pre-sliced at the salad bar), put the tomatoes and everything else in a large Ziploc bag and add the salad dressing and seasonings. Marinate for however long you have.
Using a slotted spoon, place the veggies on a large cookie sheet with a lip. You want some of the dressing in there, but not enough to make a mess. Line the cookie sheet with foil for easier cleanup.
Cook in the oven at 350 until veggies are soft--around 30 minutes. Then turn on the broiler and place the veggies under the broiler until the peppers are slightly charred. This is the only part where your attention is really needed--watch carefully! You DO want some charring, but not burned beyond recognition.
If you want meat, slice or cube some chicken breasts or thighs and either add to the veggies or cook in a frying pan and add before serving.
Meanwhile, while the veggies were cooking, you should have cooked some Jasmine rice. Serve the veggies over the rice, along with pita bread. I call this my Veggie Rice Dish, but make up some gourmet sounding name and it will be more impressive.
3. Cook some spinach pasta like linguine. Add 1 small jar of pesto; some sun-dried tomatoes (cut them up a little if necessary); marinated artichokes (again, chopped if necessary); and pitted and sliced kalamata olives. Heat gently in the microwave--dont' overcook! Top with grated parmesan cheese and serve with a salad and french bread. Your husband will think he died and ended up in a fine Italian restaurant. I call it Fab Pasta because it really is fabulous!
4. Pork tenderloin. Look on the internet and you'll find a lot of easy ways to fancy it up. But it's fine just seasoned with a little olive oil and lemon, or cajun seasoning. Or try topping it with Trader Joe's mango giner chutney or something similar. Just cover a baking sheet with foil, put the tenderloin on a rack on the cookie sheet and cook for the desired time (most sources say to cook it to 160 degreess.) Serve with baked yams (better if you peel and mash them and add a little cinnamon and nutmeg and a liiiiiiiiiiitttttttlllllllllllee butter (or more if you don't care about fat). Add some canned asparagus and suddenly you're Emeril.
5. Chinese stir-fry: Buy packaged broccoli slaw and shredded carrots, If you have a good salad bar, get shredded red cabbage and baby corn and sliced mushrooms from the salad bar. If these are not available, you can buy the cabbage and mushrooms and cut them yourself and use canned baby corn. Also buy packaged edamame beans if your store has them, or if you have an asian market in town. Buy some pork roast or use leftover pork tenderloin. Buy seasme oil and soy sauce and 5-spice powder. Stir fry the meat and veggies in the oil. Add the soy and 5-spice powder. Serve over rice.
