I don't know if this is the best jerk chicken recipe, but here is an easy one:
MARINADE
1/2 cup chopped onion
1/3 cup firmly packed brown sugar
2 jalapeno chiles, seeded, chopped
2 garlic cloves, minced
1 tablespoon apple pie spice
1/2 cup red wine vinegar
1/3 cup olive oil
1 teaspoon hot pepper sauce
CHICKEN
3 to 3 1/2 lb. cut-up frying chicken, skinned
1 GRILL DIRECTIONS: In 12x8-inch (2-quart) baking dish or large plastic bag, combine all marinade ingredients; blend well. Add chicken; turn to coat. Cover dish or seal bag. Refrigerate at least 24 hours, turning occasionally.
2 Heat half of gas grill to medium heat, or place charcoal along 1 side of charcoal grill and heat until coals are hot. Lightly oil unheated side of grill rack.
3 When ready to grill, remove chicken from marinade; reserve marinade. Place chicken pieces on oiled grill. Cover grill; cook 30 to 40 minutes or until chicken is fork tender and juices run clear, brushing chicken with marinade and turning twice during cooking. Jerk Chicken
1 T Ground allspice
1 T Dried thyme
1 1/2 t Cayenne pepper
1 1/2 t Black pepper
1 1/2 t Ground sage
3/4 t Grated nutmeg
3/4 t Cinnamon
2 T Salt
2 T Garlic powder
1 T Sugar
1/4 c Soya sauce
3/4 c Vinegar
1/2 c Orange juice
1/4 c Olive oil
1 c Minced onion
3 ea Green onions
4 ea Chicken breasts, halves
In large glass or ceramic bowl combine allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. Slowly whisk in soy sauce, vinegar, orange juice. In slow stream whisk in olive oil. Add onion and green onion. Combine well. Add chicken and allow to marinate 1 hour at room temperature or over night, covered in refrigerator. If using outdoor grill toss 1 or 2 bay leaves on coals. Grill chicken 6 min. each side. Chicken may also be broiled indoors 5-6 min. each side. Either way, brush well with marinate while cooking. For hotter flavour, double amounts of first 7 ingredients.
